A perfect balance of sweetness, aromas and freshness for the grape variety that represents best our vineyard.
When dry, Chenin is famous for its minerality. But when the harvest is belated, when the grape turns golden and the concentration of sugar increases, the aromas change. The wine becomes sweeter, more round, more viscous, has a golden robe and aromas of passion fruit, honey and acacia. In the mouth, the aromas are still powerful. The sweetness brings a lingering flavor but a touch if acidity creates balance by adding a bit of freshness.
THE ADVICE OF PLOU&FILS :
Go ahead, be bold and serve Le Paradis with a cocktail dinner, a modern cuisine, a sweet and sour dish or with a mountain of cheese. Sugar improving maturation, you can lay it down for 10 to 15 years. Drink fresh.
